Perfect for a lazy Sunday brunch, and yes you did read it right, we can supply you with mouthwatering maple bacon popcorn! This recipe is extremely versatile, add your favourite fruit or vegan chocolate chips to these entirely plant based pancakes. Here’s what you’ll need to pop on your ingredient list:

  • 300g self raising flour

  • 1 tsp baking powder

  • 1 tbsp sugar

  • 1 tbsp vanilla extract

  • 400ml plant based milk

  • 1 tbsp vegetable oil

  • Mini Pop! Maple Bacon popcorn to serve

Method:

  1. Using a balloon whisk, combine the flour, baking powder, sugar, vanilla extract, and a pinch of salt in a mixing bowl. Carefully add in the milk until the batter is smooth and dense.

  2. In a non-stick frying pan over medium-low heat, warm a little oil, then spoon 2 tbsp batter into the pan at a time to produce small, round pancakes.
