Gluten Free Salted Caramel and Pecan Cookie Recipe

These delicious and easy to cook cookies are just WOW!
With a crunchy outside and a soft center, these cookies are best eaten warm!
210g gluten-free flour
1 egg, beaten lightly
120g soft butter
120g caster sugar
100g light brown sugar
1/2 tsp of vanilla essence
1/2 tsp salt
50g chocolate chips (check the brand is gluten-free)
40g Salted Caramel Gourmet Popcorn, sliced into halves
Firstly, preheat the oven to 180c/160 fan.
Line a baking tray with parchment paper.
Mix together the soft butter and both types of sugar until creamed. Then mix in the egg and vanilla essence.
Sift in the gluten-free flour and salt. Mix in the pecans, chocolate chips and popcorn. Using a tbsp, scoop even dollops of cookie mixture onto the baking tray.
Cook for 10-12 minutes.
Once cooked, leave to cool on a cooling rack.
