Toffee Popcorn French Crumpets
To ease into the new year, AND celebrate the fact that it's Veganuary, we're here with one of our favourite recipes yet! Made by MunchingWithMolly_x on Instagram, this recipe for Toffee Popcorn French Crumpets is very likely to become our go-to breakfast for the foreseeable future and we're not sorry about it! It's delicious, nutritious and super easy to make. Plus, it's fully plant based, making it a solid 5-star choice for breakfast (or lunch... or dinner... we won't judge).
If you've never heard of French crumpets, you're not the only one! French crumpets are basically French toast, but instead of using slices of bread, you use crumpets to make the base of this delicious breakfast dish. Full recipe below!
Makes 1 serving.
Ingredients
2 crumpets
250ml of your favourite plant based milk
20g Toffee Popcorn Soy Isolate (Molly bought hers from MyVegan)
1 Apple
2 tbsp plantbased yogurt (Molly used a Vanilla Almond yogurt)
30g of your favourite granola
0.5 bag vegan Toffee popcorn
2 crushed Biscoff biscuits
10g Freeze dried raspberry pieces
Cinnamon to taste
Method
1. Stir the milk and protein powder together
2. Dip your crumpets in the mix and allow to soak
3. Fry on medium heat on both sides until golden brown
4. Top with apple slices, cinnamon, yogurt, granola, popcorn, Biscoff crumbs, freeze dried raspberries to your liking.
5. Dig in and enjoy!
