Popcorn beach cake recipe!

The sun is shining.
It’s summer time... here’s a Beach inspired treat!
We have modified this recipe from the BBC Good Food website.
Makes | 1 large beach scene
Preparation time | 25 minutes
Assembling time | 30 minutes
For the Sand:
- 375g slightly salted butter
- 750g of assorted biscuits (we used digestive and ginger biscuits)
For the vanilla cheesecake icing:
- 500g full-fat cream cheese
- 1 tbsp vanilla extract
- 200g icing sugar
- 300ml pot double cream
- Popcorn Shed’s Gourmet Popcorn (choose flavour of choice)
- Ice cream cones
- Bucket and spades
- Food processor
- Electric whisk
Gently heat the butter in a saucepan.
Put the biscuits into a food processor and pulse until you have fine, sand-like crumbs.
Add the butter and blitz again until well combined. Set aside while you make the cheesecake icing.
Whisk the cream cheese, vanilla extract and icing sugar until mixed well.
Now create your beach scene! Get creative!
