Pecan Pie Gourmet Popcorn and
Pumpkin Pie Pastry =
Double Pie 

Autumn has finally arrived. We love this time of year. Halloween and Guy Faulkes night are around the corner. There’s something wonderfully nostalgic about this time of year.

Time for pumpkins, fireworks and gourmet popcorn!

We hope you enjoy this yummy Halloween inspired dessert.

Perfect for tricking and treating… who are we kidding it’s all treating. Enjoy!

 

Makes | 1 Pie

Preparation time | 30 minutes

Setting time | 1.5 hour

 

Ingredients

1 box of Popcorn Shed’s Pecan Pie Popcorn
I x large or 2 x small pumpkins
350g of sweet shortcrust pastry (you can buy this already rolled if you want to skip the rolling part!)
140g caster sugar
½ teaspoon of salt
½ teaspoon of nutmeg
1 teaspoon of cinnamon
2 eggs
25g butter
175ml full fat milk
A sprinkling of flour for rolling the pastry

Loose bottomed tart/pie tin

Baking beans

Method

Set oven to 180C.

Remove the pumpkin flesh from within the pumpkin. You can keep the outside for pumpkin art work carvings!

Place the pumpkin flesh in a saucepan and cover with boiling water. Bring to the boil and then cover with a lid and simmer until the pumpkin is soft. Take the pumpkin off the hob and let it cool.

Put the boiled pumpkin into a food processor or smoothie maker and pulse until it resembles baby food. Set aside.

Sprinkle some flour and roll out the pastry (you can cheat and buy ready rolled shortcrust pastry)

Line the tin with the pastry and take a fork and prick holes all over the base.

Line the pastry with baking parchment paper and put the baking beans on top to make sure the pastry doesn’t rise.

Bake in the oven for 15 minutes. Then remove the baking beans and bake again for 10 minutes.

Remove from the oven and leave out to cool.

Beat the eggs.

Mix by hand the beaten eggs, melted butter, milk, sugar, salt, nutmeg and cinnamon.

Add in the pumpkin puree and mix by hand until all combined.

Pour mixture into the cooled pasty and put into the over and cook for 35 minutes until the mixture has set.

Take out of the oven and leave to cool. Once cooled take Popcorn Shed’s Pecan Pie popcorn and carefully place popcorn around the edge of the tart, pressing down gently so the popcorn sticks.

Serve up and enjoy!
