Not sure what it is about these brownies… the squidgy, oozzy, richness…topped off by the light crunchiness of Popcorn Shed’s salted caramel popcorn. Is there any time of the day that these salted caramel popcorn chocolate brownies aren’t right for?


Makes | 1 tray of brownies

Preparation time | 15 minutes

Cooking time | 25 minutes



200g unsalted butter

280g plain flour

½ tsp salt

300g dark chocolate

150g of milk chocolate chips or broken pieces

2 eggs

220g caster sugar

1sp vanilla essence/ vanilla extract

2 ‘sheds’ of salted caramel popcorn



Preheat oven to 165C

Grease tin with a dollop of butter and line with some baking parchment paper.

In a glass bowl break up the dark chocolate into small pieces.

Add the butter and melt together slowly over a low heat over a saucepan filled with a couple of inches of gently simmering water, stirring constantly.

Once melted leave aside to cool down slightly.

In a separate bowl whisk together for a minute the eggs, sugar and vanilla essence until they are combined.

Fold in one direction the melted chocolate and butter mixture slowly with a metal spoon.

Then add the flour also folding in until all the mixture is incorporated. Fold in the milk chocolate chips and one of the sheds of salted caramel popcorn

Pour mixture into baking tin and then take second shed of salted caramel and pour on top of brownie mixture.

Place in the oven for 25mins
