Small Batch Vanilla Cupcakes with Birthday Cake Popcorn!
Who doesn't like fresh vanilla cupcakes? The smell when they come out of the oven... Delicious!! Because we all need some cake in our lives now and then, our favourite baking queen Rebecca has created a small batch recipe you can easily whip up when you're feeling like a warm, sweet treat!
Makes 3 cupcakes, but can easily be multiplied for bigger batches.
Ingredients:

75g Caster Sugar

75g Unsalted Butter

1 Egg, beaten

75g Plain Flour, sifted

1 tsp Baking Powder
Decoration:

Sprinkles
Method:

Preheat the oven to 175c fan oven. Line a muffin tray with 3 muffin cases.

In a medium sized bowl, beat together you butter and sugar until light in colour and fluffy. Add the egg and beat.

Fold in the flour and baking powder until just combined.

Divide the batter between 3 cupcake cases. Bake in the oven for 10 minutes, or until risen and golden.

Remove from the oven and allow to cool.

Top with buttercream, sprinkles and popcorn
